The centuries-old Forellenhof is sited in a really wonderful location in the heart of the Buhlbach conservation area. Hospitality and fish farming have a long tradition here – and, after extensive refurbishing work, the old »Fischerstüble« became an impressive Black Forest house in 2017. The Forellenhof team offers a range of fresh trout specialities and hearty snacks in the cosy parlours – the »Forellenstube« and the »Buhlbachstube« – and on the spacious sun terrace. Freshly smoked trout and other delicacies can also be purchased in the shop here. On request, we would also be pleased to organise private parties and invitations here. Drop in for a meal here, where everyone is most sincerely welcome!
Due to renovation works, the fish farm and the »Forellenlädle« shop will be closed from 13.10. to 18.10.2021. Our restaurants will be open as usual: daily from 11.30 a.m. to 5.30 p.m. Trout specialities to take away will also be available here during this period.

Fresh trout and other traditional delicacies
Enjoy an absolutely natural idyll and indulge in fine cuisine: the menu has been especially tailored and lovingly put together by the Bareiss master chefs Oliver Ruthhardt, Oliver Steffensky and Daniel Sorge for this special location. The menu offers a refined range of creative à-la-carte dishes and hearty snacks – the finest classic and modern interpretations of trout specialities, meat and vegetarian dishes. The Buhlbach conservation area is protected against human interventions in order to maintain its natural types of vegetation. A piece of countryside whose natural integrity can be experienced close up and seen in the courses of the streams, in the floodplains, the meadows and forest. Our commitment to this wonderful piece of land is an expression of our aspiration to preserve nature, our awareness of tradition, and our forward-looking approach.
This environment guarantees ideal breeding and growing conditions for our fish stocks: the water temperature is between 6°-7°C, depending on the season; the continuously monitored pH value is between 7 and 8.
Sustainability and ecological responsibility are combined with personal passion at the Forellenhof Fish Farm: the site consists of 17 basins and ponds that are directly fed from the natural source of the »Leinbächle« stream. Rainbow trout, salmon trout, brown trout, golden trout and char grow here under ideal conditions. Our trained fish farmers care for the water and stock quality, and offer tours to those interested in gaining an insight into the operation of such a farm.
We also support a pilot project in partnership with Germany’s Federal Ministry of Education and Research: whitefish from Lake Constance and European crayfish, cared for and monitored by our fish farmers, have been placed in one of the two natural ponds on the side of the valley to research their possible breeding side-by-side in a polyculture.
The aquaculture facility Forellenhof Buhlbach will be modernised from June 2021 to May 2022. During this period, one of the most modern and innovative fish farming aquacultures in Baden-Württemberg for hatching, rearing and refining trout will be created for you. Our focus is on the sustainable and regional production of top-quality edible fish.
By using state-of-the-art aquaculture technology and redesigning the fish tanks as flow channel systems, animal welfare is optimally implemented. Against the backdrop of advancing climate change, the new facility will enable the important resource of water to be used even more efficiently and responsibly in the future. Thanks to the in-house water treatment, it is possible to guarantee operation with reduced spring flow during dry periods. In this way, the valuable water is used in multiple ways at the same time.
The modernisation of the aquaculture facility Forellenhof Buhlbach is co-financed by the European Maritime and Fisheries Fund (EMFF) and the state of Baden-Württemberg.
We offer a selection of fresh fish, finely smoked trout specialities, and other delicious products from our master chefs to take with you to enjoy at home or as a welcome present. The range changes seasonally; we recommend that you telephone in advance if you have special wishes or would like to purchase a larger quantity.
The »Forellenlädle« is open from Monday to Friday from 9.00 a.m. to noon.
On request, the »Forellenstube«, »Buhlbachstube« and sun terrace are also available for private functions, parties and celebrations. Including professional advice, perfect organisation and comprehensive service.
