Complete in-house production and processing – from the egg to the smoker – enables us to guarantee an excellent incomparable taste and the strict monitoring of all processes. Under the supervision of experienced fish farmers, rainbow trout, salmon trout, golden trout and char grow slowly in clean natural spring water without the addition of any artificial growth aids. Transparency, state-of-the-art technology and maximum animal welfare are just as important to us as achieving an ecological balance and reasonably sized fish – ensuring careful handling of the food and quality of taste. Processing and preparation are carried out entirely by hand.
The heart of our trout farm is one of the state’s most modern aquaculture facilities, while the guarantors of maximum pleasure are the people who work hard to achieve this every day behind the scenes, in the restaurants and in the Forellenlädle trout shop. They can provide expert answers to your questions and are pleased to provide cooking tips. At our Forellenlädle, “walk right in” not only means purchasing fine fish and receiving professional advice, but also being able to find out everything about the origin and breeding of the fish.
